On the Vendor Record and indeed for most other records there is a field named Created By, how do I enable this field as I have looked at some databases and this is blank and others where it has a value.

You will find the CreatedBy under the Table property in AOT.
CreatedBy : Contains information about who created a particular record.
Once you enable the property, new field get introduced in the table and as record gets inserted by the user it get filled up. if table already has data and you enable the property then it would show ‘?’ for those records.
