need a clarification on Functional user, i’ve already referred the license guide but that does not give in-depth detail.
What all transaction does Functional user can do -
Sales Invoice
Purchase Invoice
Direct Finance Entry
GRN/Shipment etc.
Please advice.

“To do” is a very generic term - there likely are invoice-related things that Function CAL allows and others that it doesn’t allow.
Regarding posting, SalesFormLetter_Invoice menu item requires at least Functional CAL, therefore yes, it suffices.
I would suggest your use the Security Development Tool to model what you want and check the CAL level required.
