I’m looking for a straw poll on what others do. Are your records owned by individual users, Teams, or maybe something else? If you could let me know the reason too it’d be immeasurably helpful.
I work for a Higher Education institution. The current setup on our CRM is for individuals to be record owners.

I work at a manufacturing plant. The vast majority of our records are owned by individuals but we are piloting our largest accounts to be owned by teams (as several individuals do work with them) but the related opptys, orders, quotes, are still owned by individuals.
I know this post is old, but this is a great question! In all except one implementation, I have set up Owner Teams. Owner Teams let the records be owned by a group of users and works in conjunction with single record ownership as well. In my experience, this is the way to go for most organizations.
In one implementation, we used Access Teams, and it was very annoying 
Access teams are a good fit when teams are randomly formed and dissolved. There aren’t clear criteria when you are forming teams. If there is a clear criteria (like territory, product, etc), owner teams are a good fit.

In terms of a use case, it’s often down to a culture of possessiveness. For instance, one individual worked with a company and will own the Account, Contact and Opportunity. Then a few months later someone else in the faculty will be doing some work with the same company. The new person then wants to be the owner of all the records because it’s theirs now. The attitude and setup have led to a lot of record duplication.
I’m trying to move us to a position where the Account and Contact records are more open and (within reason) visible to all - so maybe owned by whole faculties(?) but Opportunities are the records of the work done with the external company. And that should be owned by a Team.
