Is there a table or report (maybe SQL query, but I’m a beginner) that I can run which will output a list of dimensions associated to an item? I’d also like to run this same report to see what dimension values are associated to a customer or salesperson. I’m using NAV 5.0 SP1 and still new to the system.

The Default Dimension tables hold these values. There is a column in that table that links to the table they are for (13 for Salesperson, 27 for Item, etc). You can look in Object Designer for that or join on the Object table in SQL.
