Does anyone know which tables in D365 list the menu items by module please? I need try and build a listing of each of the various menus within the modules.

You can write a piece of code to generate it from metadata. Generating it from your application is likely better that finding a table on the internet, because it’ll be for your exact version and include your customizations and ISV products.
