There is no specific document available with the info you are looking for. However there is exhaustive info available in developers guide and SDK (http://msdn.microsoft.com/en-us/library/aa496071.aspx)
Additionally MS books (Inside Dynamics Ax 4.0 & 2009) contain very valuable info in these areas.

Rather than finding the classes and its functionality - try to investigate funcationality and then the classes involved in it. (debugging will help you in this aspect)…
Yes you can find out about some basic and system classes in MSDN.
