Please can someone give me a breakdown of what benefits a client would get (ie Performance improvements) by upgrading their NAV db server from SQL Server 2000 to SQL Server 2005 SP2?

Well, there are several reasons for upgrading:
Mainstream Support for SQL 2000 ended on 8th April 2005 (for lots of company that’s reason enough)
SQL Server 2005 has less technical limitations, especially the STD Edition is more powerfull
Plenty of new feature, see http://www.microsoft.com/sql
Performance is not necessarly better, but there are more options to optimize & tune the system
But there are also some thing to regards:
The SQL Engine behaves different in 2005 than in 2000; queries which were perfomed good in 2000 may be slow in 2005, tuning is required
SQL 2005 requires a more powerful platform, the old hardware from the SQL 2000 server may not be feasible anymore

Also make sure to get Update 4 for 2005 after you install 2005 SP2, and enable TraceFlag 4119 for Nav. Something to think about also is SQL 2K8 is around the corner so if client can wait and see how it performs with NAV, then maybe even skip 2k5
