Is it generally accepted that 5.0 sp1 is a far superior product to 5.0? I believe there are some major performance issues around SQL included in SP1. Could I ask for any views please, as I have heard conflicting stories.

that’s true, some technological changes (Indexed Views), and many more issues in Navision itself, not only SQL DB.
Check Waldo’s blog - he has brought together all versions/updates info and links (but you will need either PartnerSource or CustomerSource access to follow most of the links)
There are big performance issues with 5.00sp1 CU2 build 30488. o a lot of testing before moving to this version, especially if you have 5.00 objects.
Also be aware that in 5.00 update 1.6 build 26810 they magically move to VSIFT without any warning. The problem being that there are some major bugs in 26026.
If you are on 5.00 objects you really need to stay on 26026 or earlier, or do a full object upgrade, in which case you might as well go to 2009 R2
