I want to understand what is beyond the projects I make, so I can trace who change what object, when did he/she change the object, etc. in order to trace changes of some objects.
What object includes the users’ projects + classes / etc… ?

Have you tried using MorphX version control?
its the simplest to set up, just be aware that the version control data is stored in the same database as the Ax Database
