it depends on the business. You need to understand the concept then apply it to each of the businesses you meet. I have not yet a business with the same needs in this area (similar yes). So for example you can specify a colour dimension against the items, create a dimension and then everytime you sell it the colour dimension is posted with it. Then you can create an item dimension to analyse the number of “green” items you sold last month.

Of course you maybe referring to the BA ability to create an analutics cube. In these instances the dimensions are the measures you wish to analyse the data by.

Item attributes are considered any distinguishing feature of an item.
