Inventory adjustment are usually made by means of an Item Journals. You can find this under Warehouse → Inventory → Item Journals or Purchase → Inventory & Costing → Item Journals
Or they may be generated by Phys. Inventory Journal (it can be found in the same menu, I think).
In this journal you first run a function called “Calc. Inventory” which fills the journal with all the items and theirs quantities per location as they result by the sum of Item Ledger Entries; then you manually supply the physically counted quantities and post the resulting adjustements
