I have finshed the sprint project , i have create several form in this project .And I have many users in each has him role.Now , all my form can be it accessed by everyone.How can i can create custom roles and affect him to user.For exemple i want the Form1 be accessed and seen by user1

It depends on which version of AX you are using. As you have stated that everyone can access the form, I assume it is AX 2009 or an earlier version.
In this case hou have to attach a security key to the menu item(s) and the new table(s) you have added. Then without granting permissions the form is not available. You can then grant access using the User group form in menu Administration, Setup.
