I am getting confused between Variants and Substitutions for an Item…
Can anyone tell me the difference between them???
They are so far different that the question can’t be answered. I guess the answer to your question is:

Variants are useful if you have a large number of almost identical items that vary only in color, for example. Instead of setting up each variant as a seperate item, you can set up one item abd then specify the various colors as variants of the item.
For us substitutions would be to replace an item with a similar item.
ex/ Like if we sold 10oz of water and we were out of that - but we also sold it as a 5oz item.
we could substitte 2 5oz for the 1 10oz.
